Sweet and Sour Chicken Stir-Fry

This is one of my new favorites.I love Chinese food and since not all Chinese food is that great for you here is a great twist. It does have some sugar and sodium but not a nutritional suicide.
This is easy to make and a family hit!

List of what you will need:
1 tablespoon cornstarch
1 teaspoon garlic powder
1/4 teaspoon salt
black pepper to taste
1 pound trimmed boneless chicken breasts cut into bit size cubes
1 tablespoon olive oil
1 cup wide strips of onion
1 cup wide strips of bell peppers
1 bottle of sweet and sour stir fry sauce(I use La Choy)

In a  large bowl, combine the cornstarch, garlic powder, salt and pepper and mix well.
Add chicken and toss well until all pieces are coated.
Place a large nonstick skillet over high heat. When hot add olive oil, onion and peppers.
Cook until the veggies are crisp tender 2-4 minutes.
Transfer to large bowl and cover to keep warm.
Return pan to heat and add another little bit of olive oil and then add chicken in single layer and cook.Cook until lightly brown on both sides. When chicken is done add the veggies back to the pan and then pour in the bottle of sweet and sour sauce.

I made a large pot of brown rice and served the sweet and sour chicken over it.So good!
