Kelli's Crockpot Enchiladas



So this is a great dish for an easy meal.I made this dish last week and took it to the pastor and his wife.They had a new baby and this gave them the night off from cooking.I will warn you that it makes alot so be ready to eat leftovers.

What you need:
2 lbs ground meat browned and drained
1 can cream of chicken
1 can cream of mushroom
1 large jar of pace picante sauce
3 cups of shredded cheese
1 pkg of flour tortillas
1 pkg of taco seasoning

Brown the meat and add 2/3 cup water and the pkg of taco seasoning to it.In a large bowl mix together the cans of soup and the picante sauce.Add meat to that mixture.
Have your crockpot on high.Take the flour tortillas and start the layering process.
Layers: Flour tortilla, cover with meat/soup mixture/top with cheese.Repeat til done and make sure the last layer is cheese on top.Put lid on and cook 2 hrs on high.

Sweet and Sour Chicken Stir-Fry

This is one of my new favorites.I love Chinese food and since not all Chinese food is that great for you here is a great twist.It does have some sugar and sodium but not a nutritional suicide.
This is easy to make and a family hit!


List of what you will need:
1 tablespoon cornstarch
1 teaspoon garlic powder
1/4 teaspoon salt
black pepper to taste
1 pound trimmed boneless chicken breasts cut into bit size cubes
1 tablespoon olive oil
1 cup wide strips of onion
1 cup wide strips of bell peppers
1 bottle of sweet and sour stir fry sauce(I use La Choy)

In a  large bowl, combine the cornstarch, garlic powder, salt and pepper and mix well.
Add chicken and toss well until all pieces are coated.
Place a large nonstick skillet over high heat.When hot add olive oil, onion and peppers.
Cook until the veggies are crisp tender 2-4 minutes.
Transfer to large bowl and cover to keep warm.
Return pan to heat and add another little bit of olive oil and then add chicken in single layer and cook.Cook until lightly brown on both sides.When chicken is done add the veggies back to the pan and then pour in the bottle of sweet and sour sauce.

I made a large pot of brown rice and served the sweet and sour chicken over it.So good!

Chicken Enchilada Chili

I saw this recipe on Good Morning America the other day and knew it would be something yummy I would like so I went to their website got the recipe.I did alter some things to my liking.You can't go wrong with chicken/mexican food anything in my opinion.


Here is a list of the things you will need to make this great dish:





1 1/2 cups prepared enchilada sauce
2(14.5 ounce) cans tomatoes with seasoning
2(15 ounce) cans pinto or kidney beans with juice
2 celery stalks: chopped small
1 onion diced small
2 teaspoons chili power
1 teaspoon cumin
1 1/2 pounds chicken   (I used 4 medium sized frozen chicken breasts)
cheese
sour cream

Use a 6 quart slow cooker.Pour enchilada sauce and tomatoes in the bottom of the crock pot.
Stir in the veggies and all the spices and then add the beans.Last add the chicken on top.  
Turn crock pot on high for 7-8 hrs.





                                                                                                                                                                    Stir only if you want to it will cook without you touching it.Serve it over rice and top with cheese and sour cream.
It was a big hit here at this house and I can tell you even tasted better the next day! Enjoy and leave me some comments on what you think.

Creamy Cherry Frozen Sorbet

I love Blue Bell's version of Cherry Vanilla ice cream but since I am working on being healthier this year I found this is a great way to get the taste but not the calories.


You will need:  3 cups frozen cherries
                          2/3 cup fat free, sugar free vanilla yogurt
                         2 teaspoons lime juice, freshly squeezed
                          2 to 4 packets of sugar substitute

Put cherries in a food processor along with the yogurt, lime juice and 2 sugar substitute packets.Process until well combined.Then pour into a martini glass or small bowl and serve.

Per serving: 88 calories      20g carb
